Our Coffee Processing Flow

Careful receiving, washing, and controlled drying to preserve natural coffee quality at our wet coffee processing facilities in Nensebo District, West Arsi, Ethiopia.

Cherry Receiving & Careful Sorting

Coffee cherries are received directly from smallholder farmers across Nensebo District. We conduct meticulous inspection and sorting to ensure only ripe, healthy cherries proceed into the wet processing line.

✓ Responsible receiving and transparent collaboration with smallholder farmers.

The coffee enters the wet processing station where the skin and pulp are carefully removed. The coffee is washed and processed to develop a clean and distinctive cup profile.

✓ Controlled fermentation channels to cleanly separate mucilage.
✓ Preserving the natural floral and sweet qualities of highland coffee.
STAGE 03

Controlled Raised Bed Drying

The washed parchment coffee is transferred to raised African drying tables. It is gently turned by hand throughout the day to achieve uniform drying under optimal sunlight and ambient air circulation.

✓ Uniform airflow and protection during peak heat and overnight dew.
✓ Careful moisture stabilization before resting and preparation.
